Mission Barrel-Rested Dark Rum is produced from a first-cut molasses to impart the maximum amount of flavor and terroir into our final spirit. This dark molasses is fermented for about 72 hours using a proprietary scotch whiskey yeast. The wash is then clarified and distilled slowly for over 12 hours.

The spirit is collected and rested at barrel strength in American white oak that has been dry aged for three years, reducing harsh tannins. The spirit is aged to 90-proof and is bottled directly out of the barrel.

Tasting Notes

  • Visual: Deep amber color

  • Scent: Toasted oak with soft, syrupy notes and honied undertones

  • Opens with complex layers of caramel and oak

  • Bottoms out with a deep scotchy musk and finishes with a quick bite of alcohol
