At Mission, we engineer new ways to create classical spirits. We enact this philosophy through ‘technique blending’ - the application of production practices for one beverage to another. Much like the culinary arts, we uncover unexplored intersections of flavor & character through repeated experimentation, and in doing so, we are able to create new flavor profiles that elevate our spirits to a new level.

We never use additives, flavor enhancers, or other filler products. Our products are 100% natural and the flavors are true to the raw ingredients and production process. Our spirits are refined but approachable and can be enjoyed in cocktails or simply over ice. Keep reading to see how we do it.

American White Rum

DESCRIPTION

Mission American White Rum is the product of a fine cut molasses from mature sugarcane that is burned in the field and hand harvested. We use this cane molasses as our base for fermentation.

During fermentation, we use a propriety, high ester wine yeast to create a high gravity ‘wash’. The batch is fermented for approximately 72 hours then slowly distilled. The spirit is collected at approximately 180-proof and diluted to bottle proof with water from the prolific Kirkwood Cohansey aquifer

 

tasting notes

  • Visual: Clear.

  • Scent: Deep butterscotch with notes of caramelized sugar

  • Opens with a soft botanical dryness

  • Coats the palate with muted caramel undertones and peaks in the middle of the tongue

  • Light alcohol equalizes the sweet top-note as the combination lingers on the palate and fades

Barrel-Rested Dark Rum

DESCRIPTION

Mission Barrel-Rested Dark Rum is produced from a first-cut molasses to impart the maximum amount of raw sugar crystals and terroir into our final spirit. This molasses is smoke-aerated and fermented for about 72 hours using a proprietary scotch whiskey yeast. The wash is then clarified and distilled slowly for over 10 hours.

The spirit is collected and rested at barrel strength in American white oak that has been dry aged for three years, reducing harsh tannins. The spirit is aged to 90-proof and is bottled directly out of the barrel.

 

Tasting notes

  • Scent: Toasted oak with soft, syrupy notes and honied undertones

  • Opens with complex layers of caramel and oak

  • Bottoms out with a deep scotchy musk and finishes with a quick bite of alcohol

DESCRIPTION

Heretic by Mission Spirits is a brazenly distilled, non-traditional spiced rum. We ferment Heretic with a Caribbean style, first cut molasses and a tropical yeast profile that imparts fruity and floral notes into the mother spirit. The product is distilled slowly for 12-16 hours and proofed to navy strength (over 117 proof ) after distillation.

We age the mother spirit with Tahitian Vanilla bean to impart sweet tobacco & woody notes. Our Tahitian vanilla bean is sourced from the island of Marquesas in the Tahitian Achripeilgo, where they are hand pollinated, hand picked, sun dried, massaged, and wrapped in wool blankets to sweat. After aging on Vanilla, we rest the spirit for a short time on French oak to soften the front and back of the palate and compliment the top vanilla note with toasted oak

  • Mid - Palate: Woody sweet vanilla, tobacco, leather
